Kathryn tells me this is a favorite for cookie exchanges, makes a million cookies and only uses one bowl (three thumbs up!):
Ranger Cookies
1 1/2 cup shortening
1/2 cup butter
1 cup dark brown sugar
1 cup white sugar
2 eggs
1 tsp. vanilla
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups rolled oats
2 cups rice flakes (Special K)
2 cups coconut
Mix ingredients. Drop by teaspoonful on greased cookie sheet. Bake at 350 degrees for about 15 minutes.
